Speilsalen retains its star in the 2022 Michelin Guide

Congratulations to Speilsalen with their Michelin Star in the 2022 edition of the Michelin Guide Nordic Countries.

The 2022 edition of the Michelin Guide Nordic Countries was launched with an award ceremony in Stavanger Concert Hall on Monday 4 July, where the best restaurants with chefs and owners were present along with international press and invited guests.

Speilsalen retained its star in this year's guide and a satisfied and happy Christopher Davidsen with his team was able to celebrate another year in the world's most prestigious and renowned guide to food and drink experiences.

I am very proud that we confirm our position in the Michelin Guide with a star for another year and use the opportunity to give credit and thanks to my fantastic team and everyone who supports us and push us every day so that we can become a little bit better and take a step further as we continue our culinary journey. We get an incredible amount of great feedback from guests and colleagues regularly and these make us even better and gives us energy to strive further. We look forward to continue and to take new steps in the future to make Speilsalen even better!

"Since last year, we have expanded our collaboration with the hotel's own farm on Jonsvatnet in Trondheim, Bråttan Gård, where we have our own test kitchen and produce some of our own vegetables and our own herbs. Both our apprentices and our chefs in addition to the management team are regularly at Bråttan Gård taking part in the process of growing raw materials for our kitchen in Speilsalen, as well as testing and developing new dishes for the menu - this definitely gives us a new dimension and we will continue to expand this collaboration further in the coming years", says Christopher Davidsen.

In 2020, Speilsalen received its first Michelin star during the Nordic Countries ceremony in Olavshallen, which was then hosted by Trondheim and Norway for the very first time. The experience of getting a star on home turf in Trondheim, just 10 months after the opening of the restaurant, is an achievement that was noticed internationally and this gave both Speilsalen and Britannia Hotel a lot of attention and many visiting guests from all over the world, who took the trip to experience Christopher Davidsen and Speilsalen's gastronomy and elegant service in the historic surroundings of the mirrored hall - Speilsalen.

Speilsalen recently won The Nordic Prize - the award for this years best restaurant in the Nordic countries.

From Friday 5 August, Speilsalen will also start with its popular Champagne lunch on Fridays. Until now, this has only been available on Saturdays, but from August even more people have the opportunity to enjoy a 4-course seafood-based lunch menu with accompanying Champagne. A perfect end to a meeting for the company, a chance to impress new business relationships or to value your good colleagues, or simply a perfect start to the weekend for both local and visiting holiday and leisure guests to Britannia Hotel.
