The wine bar at the Britannia Hotel will have one of Norways largest and most exciting wine lists with several thousand wines available in its cellar.
We`ve hired one of the most respected and knowledgeable wine experts in Norway
-Ulf has throughout the years built up a very strong position in Norway within wine through his journalism and his own members club, and we`re very lucky to have him on board to curate the content and select the wines for what will become one of Norways most spectacular and exciting wine cellars within the wine bar. His wide knowledge and network within the wine community is second to none, not just in Norway, but internationally as well. We look forward to work with Ulf and we`re convinced that he will contribute and add something very special to our project with the new wine bar, says Mikael Forselius, GM at the hotel.
-I`m honored to be a part of this special project and to get the opportunity to build this wine bar and cellar from scratch, sourcing unique wines from all over the world to its collection. I have already been promised some fantastic wines from my suppliers that are not available on the open market – they`re ready to open their cellars just for us to find those special, old and rare wines that you can`t find anywhere, to be able create something unique. Our ambition is to open a wine bar that will attract people to travel to Trondheim to experience it, a destination in itself, like the ambition for the Britannia Hotel, says Ulf Dalheim.
Ulf has a clear vision of how his wine bar will be:
The wine bar at the Britannia will be approachable and open for everyone, with an exciting range of options in selection and price available for both the experts and the beginners. We will invite producers regularly, arrange courses, tastings, and themed weeks. I want to create a lively and inviting environment, and an atmosphere filled with culture, music and literature to compliment the large selection of wine on offer.
Plans to collaborate with Bocuse d`Or silver winner Christopher Davidsen
Food will also play an important part of this wine bar, and I want to collaborate with Bocuse d`Or silver medalist, Christopher Davidsen, who is in charge of the prestige restaurant Speilsalen at the Britannia, to create a perfect pairing of pintxos/tapas and small courses to go along with the wine. We will of course have a fantastic selection of the best cured meats and jamón as well as cheese and olives and freshly baked bread from the bakery at the hotel.
Ulf Dalheims background:
Ulf Dalheim worked as a journalist for the regional newspaper Adresseavisen for over 40 years, and as their wine expert and weekly reporter on wine for the last 26 years. He also started his own members club and wine community, Vinpuls, in 2000, which today has over 3000 members and is the largest wine club in Norway.
Christopher Davidsen was awarded silver in Bocuse d’Or in Lyon in January 2017, following his previous successes of silver in Bocuse d’Europe and gold in the Global Chef World Cup. Now, Davidsen’s food will have a new home at Britannia Hotel, with the ambition to create one of Scandinavia’s finest restaurants.
Davidsen’s appointment is part of Britannia Hotel’s extensive renovation, the largest hospitality refurbishment ever undertaken in Scandinavia. Since opening in 1870 Britannia has been the site of the most prominent events and celebrations in Trondheim. In 2019 the hotel will once again be the place for celebrations and special occasions; reopening as a classical-modern, internationally-inspired five-star hotel and house of restaurants.
Christopher Davidsen will begin his work at Britannia from 1st May 2018. Focusing his talent on the prestigious redevelopment of Speilsalen. Speilsalen has remained Trondheim’s most beautiful venue since its opening in 1870. A grand dining hall, lined with mirrors, have reflected distinguished celebrations for over a century.
Like the rest of the hotel, with careful preservation of its esteemed heritage, Speilsalen will be given new life. The plan is to establish this exquisite dining environment as a top restaurant under Davidsen’s leadership, attracting a new food and drink interested guests to the hotel. Speilsalen will be one of Britannia’s six restaurants and bistros.
Davidsen will spend the next year developing the concept and forming the vision of Speilsalen, visiting the worlds finest restaurants and drawing on local inspiration.
“I am looking forward to catching up with a new chapter in my career and to start the journey developing Speilsalen at Britannia Hotel to become a top restaurant in Norway. I take with me invaluable experience from the Bocuse d`Or and the competitive environment I have been part of in recent years, using this as an inspiration to create something utterly unique in Speilsalen. I look forward to meeting and hearing feedback from new guests every evening, I will be continually working on my menu to create my own food universe within the historical framework of Speilsalen.” Christopher Davidsen
“Christopher Davidsen is exactly the person we’ve been looking for when we are going to establish Britannia’s prestigious restaurant in Speilsalen. We have found a star chef with big ambitions, a chef who has proven that he can cook world-class and who also has one local anchoring to Trondheim and knowledge of the amazing ingredients we have in the region. I am convinced that Christopher will succeed in making Speilsalen a contemporary temple of gastronomic delights.“ CEO Mikael Forselius
We are incredibly proud to showcase our new identity. Just as the hotel is being completely renovated, we have now made a new identity based on the wonderful story of the hotel and the future we now go into.
