Britannia Hotel has teamed up with Trøndersk Matfestival and Bryggerifestival, to host a series of food and drink courses during this year’s food and beer festivals in Trondheim (1-3 August). One course in particular unites these two disciplines, as Roar Hildonen takes us on a journey of perfect pairings and magnificent matches.

Roar Hildonen has been working in the restaurant business in Trondheim for over 30 years. He runs the restaurant To Rom og Kjøkken (‘Two Rooms and a Kitchen’), a restaurant famous for grand culinary experiences, great wine and cocktails, and immaculate hospitality.

Matfestival 2019 and Britannia Hotel are delighted to welcome Roar to share his food and drink pairing expertise. Would you like to know which is the most suited beverage with clams and mussels … and why? Find out the key to this pairing and more, and also get to taste six different flavours from the Trøndelag food region. The theme for this year’s festival is ‘coastal flavours’, a theme which is sure to resonate through this course.

Roar Hildonen is also fond of pairing food with beer and cider. This year sees the first cider company exhibiting at the Brewery Festival. A great opportunity to taste exquisite Norwegian apple cider, local beer, and wine alongside flavours of the sea and beyond.

The course is on Thursday 1stAugust, 5pm-6pm. It is hosted in Britannia’s specially designed food course room, alongside Jonathan Grill restaurant. The course will be conducted in English.
