Nils wins the National Championships in Culinary Arts!

Britannia Hotel's Sous Chef Nils Flatmark, takes gold and will go on to compete for the coveted title of Chef of the Year 2022

Britannia is delighted to announce that our Sous Chef Nils Flatmark won the National Championships in Culinary Arts and goes on to compete for the coveted National Chef of the Year.

The National Championships in Culinary Arts is organized every other year and was first held in 1990. Bent Stiansen became the first winner 30 years ago and, just three years later, he went on to take gold in Bocuse D'or in Lyon.

This path has also been trodden by Speilsalen's Executive Head Chef Christopher Davidsen, who took gold in Bocuse D'or in 2017. This year's incumbent champion was also Christopher's Sous Chef, Håvard Werklend, who won the last National Championships in Culinary Arts back in 2018.

Nils Flatmark

Nils Flatmark has worked as Britannia's Sous Chef since 2021. He has taken part in several competitions and won gold in the Chef Olympics in 2020. He also won the title of Nordic Green Chef of the Year for 2022.

“I have taken inspiration for my menu from the vegetable and fruit garden here at Braattan Gaard. All herbs and vegetables apart from the main raw materials are collected by me and Maia Tingstad the day before the competition. All of the food waste from the rehearsal has gone to the composting machine here on the farm. If you choose Norwegian, you choose a vibrant Norway. I can't wait to show off what we've been working on!” Explained Nils ahead of the competition.

"If I have to choose one dish, I would say that the first dish was an absolute overwhelming success. Everyone around the table agreed on that and there were many people who know a lot about food. We were all very impressed by the high level. When the dish arrived on the table, it looked fantastic visually, but the flavours were even better," says Dime Mencevski, Business Unit Director at Segers Fabriker AB, one of the guests who ate Nils' dishes at this year's chef competition.
