The stage is set once again. Chandeliers shimmer, crystal glasses chime, and the doors at Speilsalen (the Mirror Hall) open to a new movement.

Petite Symphony is a new chapter in the story of Speilsalen, a shorter composition that reflects the same craftsmanship, precision and quiet pursuit of excellence that define the restaurant's culinary philosophy.

Set within Britannia Hotel's historic Speilsalen, dating back to 1896, the experience unfolds across ten carefully composed courses. Each is guided by the same respect for seasonality, provenance and meticulous technique that has established Speilsalen among Norway's finest dining destinations.

Available on Wednesdays and Thursdays from 6.00 pm.

ACT I - Opening Notes

The evening begins with a carefully composed prologue of delicate bites, introducing the themes that define Petite Symphony: exceptional ingredients drawn from the seas, forests and cultivated landscapes of Trøndelag. Seasonal produce and herbs from Britannia's own kitchen garden are brought together with precision, balance and restraint.

Under the direction of Head Chef Håkon Solbakk, each course reflects a deep respect for provenance, craftsmanship and the integrity of every ingredient.

ACT II – The Main Part

The second act explores the richness of Trøndelag's seas, forests and mountains through a carefully composed selection of seasonal ingredients. Here, bold Nordic flavours are complemented by refined Asian influences and contemporary techniques that reflect Head Chef Håkon Solbakk's distinctive culinary style.

Each course is guided by precision and restraint, allowing the integrity and natural character of every ingredient to shine.

ACT III – The Sweet Finale

The final act returns to Britannia's own kitchen garden, where seasonal fruits inspire a trio of desserts that brings the evening to its elegant conclusion. Each course is composed with balance, precision and quiet refinement, a fitting finale to Petite Symphony.

Speilsalen in the MICHELIN Guide

Awarded one MICHELIN Star in 2020, Speilsalen continues to hold its place in the MICHELIN Guide, with the distinction retained in the 2026 edition.

Guided by the rhythm of the seasons, the menu evolves throughout the year, reflecting the availability of seafood, vegetables, herbs and fruit. Each course is composed to express the integrity of every ingredient with precision, balance and refinement.

Our sommeliers have carefully curated both a wine pairing and a non-alcoholic beverage pairing, each thoughtfully composed to complement the menu.
