Speilsalen in Trondheim and the Palace in Helsinki are opening their doors for two exclusive guest performances.

A rare collaboration. A carefully composed menu. Two evenings created to be remembered. Join us when Eero Vottonen, head chef at Palace Restaurant in Helsinki, and Speilsalen's own head chef, Håkon Solbakk, meet in a culinary guest performance created to surprise, delight and be remembered long after the last course. 

On Saturday, 18 April, Speilsalen will host the renowned Palace in Helsinki, before Palace comes to the venerable Speilsalen in Trondheim on Saturday, 25 April.

From Bocuse d'Or to Michelin

Vottonen represented Finland in the prestigious Bocuse d'Or final in Lyon and later led the Finnish Bocuse d'Or national team. After a career at several of the country's most renowned restaurants, he led Palace into a new era of greatness. Palace is currently the only restaurant in Finland with two Michelin stars, and Vottonen's cuisine combines the precision of a competitive chef with a deep understanding of Nordic ingredients and the rhythm of the seasons.

Precision with roots in northern Trøndelag

Håkon Solbakk has an impressive track record from a long competitive career, including first place in Nordic Chef of the Year in 2022 and six years on the Norwegian National Culinary Team. Since 2019, he has been head chef at Speilsalen, and helped secure the restaurant's first Michelin star in 2020. Solbakk is known for his precise cuisine with a clear identity, based on top-quality local ingredients and inspired by his upbringing in northern Trøndelag.

A tasting menu in Nordic harmony

Together, Vottonen and Solbakk present a tasting menu composed exclusively for both evenings. The menu is a meeting between Finnish and Norwegian perspectives, shaped by season, technique and curiosity. Each dish is characterised by their shared philosophy, where uncompromising ingredient quality, refined execution and culinary playfulness come together in harmonious interplay.
